- 2 skinless, boneless chicken breast halves, cut into bite-size pieces

- 1 tablespoon tomato paste

- 1 cup plain yogurt

- ¾ cup coconut milk

- ½ lemon, juiced

- ½ teaspoon cayenne pepper


Directions:

1. Sauté the OnionHeat the olive oil in a skillet over medium heat. Sauté the diced onion until lightly browned.

   


2. Add Spices:  Stir in the garlic, curry powder, cinnamon, paprika, bay leaf, ginger, sugar, and salt. Continue stirring for 2 minutes.

   


3. Cook the Chicken:  Add the chicken pieces, tomato paste, yogurt, and coconut milk to the skillet. Bring the mixture to a boil, then reduce the heat and simmer for 20 to 25 minutes.

   


4. Final Touches:   Remove the bay leaf and stir in the lemon juice and cayenne pepper. Simmer for an additional 5 minutes.



5. Serve:  Serve the chicken curry hot, ideally over freshly cooked basmati or jasmine rice, and with homemade naan for a complete meal.
