 Chicken Tikka Masala Recipe;

Ingredients:

For the Chicken Tikka:

  • 500g boneless chicken (thighs or breast), cut into bite-sized pieces

  • ½ cup plain yogurt

  • 1 tbsp lemon juice


  • 1 tsp turmeric powder

  • 1 tsp garam masala

  • 1 tsp cumin powder

  • 1 tsp coriander powder

  • 1 tsp red chili powder (adjust to taste)

  • 1 tbsp ginger-garlic paste
  • Salt to taste

  • 1 tbsp oil or melted butter

  • For the Masala Sauce:
  • 2 tbsp oil or butter

  • 1 large onion, finely chopped

  • 2 tomatoes, pureed

  • 1 tbsp tomato paste

  • 1 tbsp ginger-garlic paste

  • 1 tsp cumin seeds

  • 1 tsp coriander powder

  • 1 tsp garam masala

  • 1 tsp turmeric powder

  • ½ tsp red chili powder (optional)

  • ½ cup heavy cream or coconut milk

  • ¼ cup cashew paste (optional, for creaminess)

  • ½ cup water (adjust for consistency)

  • Salt to taste

  • Fresh cilantro leaves for garnish
  • Instructions:
  • Step 1: Marinate the Chicken;

  • In a bowl, combine yogurt, lemon juice, turmeric, garam masala, cumin powder, coriander powder, chili powder, ginger-garlic paste, salt, and oil. Mix well.

  • Add the chicken pieces and coat them evenly in the marinade. Cover and refrigerate for at least 1 hour (or overnight for the best flavor

  • Step 2: Cook the Chicken;
  • Preheat the oven to 200°C (400°F) or heat a grill pan.

  • Thread the marinated chicken onto skewers or spread them on a lined baking sheet.

  • Cook for 15-20 minutes, turning occasionally, until charred and fully cooked. Alternatively, cook in a pan with a little oil over medium heat until golden brown. Set aside.

  • Step 3: Prepare the Masala Sauce;

    1. Add chopped onions and sauté until golden brown
    2. Stir in ginger-garlic paste and cook for a minute until fragrant.
    3. Pour in the tomato puree and tomato paste. Cook for 5-7 minutes, stirring occasionally, until the oil separates.
    4. Add turmeric, coriander powder, garam masala, red chili powder, and salt. Mix well.
    5. Pour in the cashew paste (if using) and stir to combine.
    6. Add the grilled chicken tikka pieces and mix well with the sauce.
    7. Pour in water to adjust the consistency. Simmer for 5-7 minutes.
    8. Stir in the heavy cream and mix well. Let it simmer for 2 more minutes.

    Step 4: Garnish and Serve

    1. Turn off the heat and garnish with fresh cilantro.
    2. Serve hot with naan, roti, or steamed rice.

    Tips for the Best Chicken Tikka Masala:

    • Use boneless chicken thighs for a juicier texture.
    • Marinate the chicken overnight for deeper flavors.
    • For extra smokiness, place a hot charcoal piece in a small bowl in the pan, drizzle oil on it, and cover for a few minutes.
